Chef’s Choice is owned & managed by Chef Gerard who has 35 years in the culinary field, ranging from 5 star dining to backcountry outfitting with help from his wife Holly who has 35 years in the hospitality industry.

First kitchen job dishwashing at local roadhouse at the age of 14, assistant kitchen manager at 16
Sous Chef at hi-end steak & seafood restaurant, were I cooked for the producer of Pink Floyd’s Dark Side of the Moon Album
Sous Chef at resort golf course where I met my wife and was introduced to the chef at the main resort, who proceeded to hire me as an apprentice
Graduating from George Brown College culinary program were I got to practice with the Canadian Culinary Olympic Team
Garde Manger Chef at Rimrock Resort Hotel where I worked/learned with expert sushi chefs
Head Chef at Kananaskis Ranch where we outfitted the Trail Hikers of the Rocky Mountains, 100 guests per week. I would make a weekly trip to the trail head with my horse and two pack horses to acquire supplies (12 hour round trip)
Head Chef Grizzly Paw Brew Pub. Catered the movie Snow Dogs where I met and fed Cuba Gooding JR, James Coburn and Brian Doyle-Murray (Bill Murray’s brother and writer of CaddyShack) and also Free beer :)
Executive Chef at Camrose Resort & Casino, where I was a part of the opening team.
Executive Chef at Penticton Trade & Convention and South Okanagan Event Center. I was part of the opening team for the event center (Also helped open the Abbotsford and Dawson’s Creek event centers.) There were days when there would be a plated service for 1000 people at the Trade Center and a concert at the Event Center that involved backstage catering, a 100 seat restaurant, 20 luxury suites, and 6 concession stands. Crazy days. Was the private chef to Bill Cosby for three days, he recognized me and the quality on the radio. Met and talked with the Tragically Hip twice, they signed my chef jacket and also traded some swag for my rib recipe. Kiss, Rihanna, ZZ top, Jan Arden (funniest person ever), & Chicago were amongst the many other stars I fed.
